Gourmet Cookies

Well, I just said that to make it sound a bit fancier. It’s that style of cookie you see on Instagram from Cédric — very soft and chewy on the inside, slightly crunchy on the outside and around the edges, and DE-LI-CIOUS!

Plus, you can “personalize” them with whatever toppings you like!

For 10 cookies:

  • 180 g brown sugar

  • 180 g butter

Softened butter is creamed slightly with the sugar using the paddle attachment.

  • 25 g egg

Lightly beaten egg is added to the butter and mixed again until just slightly fluffy.

  • 180 g flour

  • 3 g baking powder

  • 5 g salt

Combine the dry ingredients in a bowl, then add them to the butter mixture. Mix on low speed just until incorporated.

  • 150 g dark chocolate

Chop the chocolate finely and add it to the dough. Then form 10 balls, each weighing 70 g.
Place them on a baking tray lined with parchment paper (if you have a small oven, you may need to bake only 5 at a time), and bake at 190°C with fan for 5.5 to 7 minutes, depending on how done you want them.

After baking, use a ring or round cutter to shape them nicely into circles. I also added a few extra pieces of chocolate on top while they were still hot (so they’d melt), and once cooled, I decorated them with praline, caramel, and sea salt flakes. I liked them — I’ll make them again!
